Definitus Foggy Hill Pinot Noir

Tapanappa Definitus Foggy Hill Pinot Noir is made with fruit handpicked from the Definitus Block of the Foggy Hill Vineyard on South Australia's Fleurieu Peninsula.
The Definitus Block lies in the centre of a north-western slope. Here the underlying sandstone is close to the soil surface, restricting vine vigour to produce smaller yields of more deeply coloured and intense fruit.
The grapes are chilled and delivered to the winery in the Piccadilly Valley. Some whole bunches are placed in the bottom of fermentation tubs, which are filled with destemmed and crushed fruit. Cold soaking follows.
The juice is then inoculated with yeast and fermented with daily hand plunging. The whole bunches at the bottom of the tubs are progressively crushed to release their sugar.
At the end of the ferment, the tubs are sealed for maceration on skins. The wine is then pressed to new and seasoned oak and inoculated for malolactic fermentation on lees.
The wine is racked and returned to barrel for maturation, then racked clear, blended and bottled.
Deep carmine red, Tapanappa Definitus Foggy Hill Pinot Noir has rich, ripe flavours and firm but rounded tannins. Cellaring potential is seven years.
