D Block Shiraz
Wine
Toolangi D Block Shiraz draws from the winery's Yarra Valley estate adjacent to Toolangi State Forest. D Block is all PT23 Shiraz, grafted onto rootstock from the original 1996 plantings.
Low cropped, handpicked fruit is fermented entirely as whole bunches. After three weeks on skins, the wine is pressed to French oak hogsheads for natural malolactic conversion. It is then sulphured on lees.
Maturation in oak lasts around 10 months. The wine is racked twice prior to bottling.
Deep red purple, Toolangi D Block Shiraz is a cool climate wine, spicy and textural with an earthy, mineral finish. Cellaring potential is 10 years.
