Shadowfax Minnow Roussanne is grown on the estate vineyard in Werribee, south-west of Melbourne. The grapes are hand harvested in the cool of the morning.

The fruit is gently whole bunch pressed. Its juice is left to settle overnight. It is then racked and gravity fed to seasoned French hogsheads for wild yeast fermentation in the winery's underground cellar.

The wine develops complexity on light lees for six months, then is bottled in early summer.

Deep yellow, Shadowfax Minnow Roussanne has rich fruit flavours around a mineral core, gravelly texture and a saline crunch. Best soon after release.
