Cape Mentelle Two Vineyards Shiraz is made with the finest selections of Margaret River estate fruit from the Trinders and Chapman Brook Vineyards.
The Shiraz fruit and a tiny percentage of Viognier is destemmed and lightly crushed to open fermenters.
During wild yeast fermentation, the juice sees plunging and pump overs, then delestage where the juice is racked away and returned over the top of the grape skins.
The wine spends many weeks developing on skins to ensure balanced tannins, fruit flavours and colour. It is then lightly basket pressed and transferred to French and American oak barriques, a small proportion new.
It ages on lees for eight months, is then racked off its lees and aged further. After blending, the wine is bottled without fining or filtration.
Deep plum purple, Cape Mentelle Two Vineyards Shiraz has powerful fruit flavours and dark spice wrapped in long, fine grained tannins.
Produced only in outstanding years. Cellaring potential is 15 years.
