Melba Vineyard Cabernet Sauvignon

De Bortoli Yarra Valley Melba Vineyard Cabernet Sauvignon is sourced from the Melba Vineyard. Since the 1970s it has had a reputation for producing exceptional Cabernet.

The wine is only released in select years. The name Melba pays tribute to Australia's renowned operatic soprano diva, Dame Nellie Melba.

The fruit is destemmed and lightly crushed. Individual vineyard batches are fermented on skins for up to 30 days, with each parcel pressed as it reaches the desired balance of fruit and tannin.

The individual parcels are then racked to oak to mature for 18 months. During this time, they are regularly racked to ensure each is at its best for blending.

Deep red, De Bortoli Yarra Valley Melba Vineyard Cabernet Sauvignon has dense fruit flavours, silky tannins and a persistent finish. Cellaring potential is 12 years.
