EVOI Reserve Margaret River Cabernet Sauvignon is made with fruit handpicked from the estate vineyard at Wilyabrup in the heart of Margaret River, known for its affinity for Cabernet.
The grapes are fermented in small batches, with manual plunging. The wine is then pressed to a mix of French oak barrels and tanks to complete both the primary ferment and malolactic fermentation.
A very limited release, this wine represents just a few barrels singled out to showcase the best of EVOI's Margaret River Cabernet. Once bottled, the wine is cellared to gain complexity before release.
Inky purple, EVOI Reserve Margaret River Cabernet Sauvignon overflows with dark fruit flavours, spicy oak and has a seamless tannin finish. Cellaring potential is 12 years.
