Fraser Gallop Estate Ice Pressed Chardonnay is the first of its kind in Western Australia. Made with techniques similar to those for Canadian ice wines, its inaugural vintage was 2013.
Traditional ice wines are made with grapes frozen naturally on the vine, not possible in Australia's (relatively) warm winters. Instead, the grapes are picked and spend five nights in a freezer at -16°C.
The frozen whole bunches are then gently pressed. With the water in the fruit frozen into ice, pressing extracts a sweeter and more concentrated juice, ideal for a dessert style wine.
After fermentation, the wine spends several months ageing in a mix of new and seasoned French oak barrels as well as stainless steel.
Deep yellow, Fraser Gallop Estate Ice Pressed Chardonnay is rich, unctuous and intense with a syrupy texture. Cellaring potential is five years.
A wine that can be enjoyed as an aperitif or as a dessert style.
