Wine
Briar Ridge Fiano, originally sourced from Wrattonbully in South Australia, is now grown in front of the winery's old cottage at Mount View in the Hunter Valley.
The grapes are hand harvested and crushed into the press, where they undergo six hours of skin contact. The juice is then pressed directly to French oak puncheons for fermentation with ambient yeasts.
Towards the end of the ferment, the wine is gently stirred. It rests on yeast lees for six months before it is prepared for bottling.
Bright yellow, Briar Ridge Fiano is richly flavoured and textured with subtle nutty characters and a long acid line. Cellaring potential is five years.
