Gaelic Cemetery Vineyard McAskill Riesling is primarily sourced from a small block of vines on the estate vineyard at White Hut in the Clare Valley, planted in 2000.
The wine honours John McAskill, who in 1860 donated the land beside the vineyard as a cemetery for the Clare Valley's Gaelic speaking Scottish pioneers.
The grapes are harvested in the cool early hours then crushed, chilled and pressed as soon as possible. The juice is clarified via cold settling then inoculated with a pure yeast culture.
Fermentation occurs in temperature controlled stainless steel tanks. After 25-30 days the wine is fined, stabilized and filtered for bottling. It is only made in small volumes.
Pale green, Gaelic Cemetery Vineyard McAskill Riesling has salivating acidity balanced by citrus flavours and texture. Cellaring potential is 10 years.
