Chardonnay

Foxeys Hangout Chardonnay draws from hand tended, sustainable vineyards on the Mornington Peninsula. It is made at the estate's biodynamic winery at Red Hill.

Most of the grapes are whole bunch pressed straight to barrel to ferment on full solids. Some are whole bunch fermented prior to pressing to foster a textural component.

A quarter of the barrels are new French oak. Most of the wine undergoes natural malolactic fermentation, while several parcels are sulphured after their primary ferment. The lees are stirred occasionally until late spring.

The wine is then allowed to settle prior to bottling. There is no acid addition.

Pale yellow, Foxeys Hangout Chardonnay is highly textural and mineral in style with seamless oak and tight acidity. Cellaring potential is five years.
