Forest Hill Vineyard Shiraz blends fruit from the Forest Hill and Mount Barker East Vineyards in Great Southern. Both are grown in gravelly, loamy soils over clay.
The fruit is picked and destemmed into small open fermenters, maintaining as many whole berries as possible. Some small vessels are filled entirely with whole bunches.
The fermenting juice is either pumped over or plunged by hand twice a day. The wine is then pressed to Burgundian oak, a small proportion new, for malolactic fermentation. This allows the soft integration of grape and oak tannins.
After 10 months maturing in oak, the wine is blended and bottled.
Bright purple, Forest Hill Vineyard Shiraz is medium bodied but dense with fine, ripe tannins and balanced natural acidity. Cellaring potential is 10 years.
