Poacher's Ridge Cabernet Sauvignon is made with fruit handpicked from low yielding vines of the Louis Block, grown amongst the undulating hills of Great Southern near Narrikup.
The grapes are crushed, destemmed and pumped into overhead fermenters where they are inoculated with yeast. At peak fermentation, the juice is regularly pumped over with aeration to extract fine tannins, flavour and colour from the skins.
Post ferment, the wine is run into French oak barrels, 35-40% new, for 15 months of maturation. It is then pumped to tank, minimally fined and filtered for bottling.
Deep red, Poacher's Ridge Cabernet Sauvignon has lively dark fruit flavours, fine tannins and underlying oak power. Cellaring potential is 15 years.
