Semillon Sauvignon Blanc

Thompson Estate Semillon Sauvignon Blanc is made with Margaret River fruit picked at optimum ripeness. Cooling maritime breezes ensure the grapes develop intense flavours.

The Semillon and Sauvignon Blanc are handled separately. After settling, the juice of each is sent to seasoned French oak barrels to ferment. Two parcels ferment using wild yeasts to add complexity, while the remainder ferment with a selected yeast.

The wine is blended and bottled early on – after just three months in barrel – to retain its freshness and varietal character.

Straw green, Thompson Estate Semillon Sauvignon Blanc has fresh citrus flavours, driving natural acidity and subtle oak. Cellaring potential is three years.
