The Islander Estate Vineyards The Cygnet Shiraz is one of the winery's leading wines. It is named after the river that runs through their estate and is the lifeblood of Kangaroo Island.
Handpicked grapes are destemmed into large barrels for wild yeast fermentation. Extended maceration on skins follows, lasting until the wine has completed malolactic fermentation.
The wine is drained and the skins are pressed in a hand operated basket press. After two years maturing in French oak, the parcels are blended and bottled. The wine is aged for a further two years before release.
Dark ruby, The Islander Estate Vineyard The Cygnet Shiraz has dark fruit flavours with long, fine, savoury tannins. Cellaring potential is 10 years.
