Wine
Ministry of Clouds Kintsugi is a wine inspired by France's southern Rhône: a field blend of old vine Grenache, Mataro and Shiraz from a dry grown vineyard in Blewitt Springs.
All the varieties are fermented together with wild yeasts. Nearly half of the grapes are retained as whole bunches while the rest are added as destemmed whole berries.
During fermentation, the fruit is kept submerged using header boards to eliminate the need for plunging or pump overs. An extra parcel of old bush vine Grenache is then blended in to add extra fragrance and lift.
The wine matures for 18 months on fine lees in a mix of inert tanks and seasoned oak. After bottling, it is aged for eight months further before release.
Crimson purple, Ministry of Clouds Kintsugi has dense core red and blue fruit flavours with long sandy tannins and bright acidity. Cellaring potential is seven years.
