Pauls Lane Pinot Noir

Toolangi Pauls Lane Pinot Noir is grown on undulating slopes of Dixons Creek in the northern Yarra Valley. The blocks are designed to channel air through the vines and drain excess water from the soils.
The fruit is handpicked. Half is destemmed to an open fermenter; the rest is added as whole bunches. Natural primary fermentation begins after a short cold soak. Malolactic fermentation also occurs naturally.
After around three weeks on skins, the wine is pressed to new and seasoned French oak where it matures for eight months. It is racked off lees just prior to bottling. There is no fining or filtration.
Bright crimson, Toolangi Pauls Lane Pinot Noir is velvety smooth with mouth filling fruit flavours, earthy nuances and lasting length. Cellaring potential is seven years.
