Wine
Mitolo G.A.M. Shiraz sits at the heart of Mitolo. The first wine produced by founder Frank Mitolo in 2000, it is named after his three children Gemma, Alex and Marco.
The fruit is grown on the Chinese Block of the Lopresti family's vineyard at the southern end of McLaren Vale. The soil is heavy grey loam and black Biscay clay: ideal for growing grapes of intense yet balanced flavour.
Each parcel of fruit is fermented on skins for 10 days. The ferments are kept cool, helping to preserve bright fruit flavours without extracting bitter tannins from the skins and seeds.
Once pressed the batches are run to fine grained French oak, both new and seasoned, to age for 15-18 months. Each barrel is then carefully considered for the final blend.
Opaque red purple, Mitolo G.A.M. Shiraz is full bodied, savoury and structured with dense black fruits underlined subtle earthy notes. Cellaring potential is 12 years.
