Wine
Gundog Estate Canberra District Shiraz blends high quality parcels of fruit from various Canberra District sites, including the Four Winds, Wallaroo and Dahlberg Vineyards.
For each vineyard parcel, a combination of crushed fruit and whole berries are cold soaked for several days. The ferments are allowed to warm and begin naturally before the juice is inoculated with cultured yeast.
Maturation takes place over 12 months in French oak puncheons, a small proportion new.
Inky garnet, Gundog Estate Canberra District Shiraz is intensely aromatic and medium bodied, with spicy dark fruits in a glove of velvety tannin. Cellaring potential is 15 years.
