Foxeys Hangout Pinot Gris is made with Mornington Peninsula fruit picked early in the season at low sugar levels, ensuring lower alcohol in the final wine.
The grapes are whole bunch pressed. After settling overnight, the juice is racked to barrels with plenty of fluffy lees from the bottom of the settling tank for texture. The barrels are old to add oak complexity without overpowering the fruit.
Fermentation is with native yeasts. There is no acid additions, malolactic fermentation or barrel stirring; however, the wine gains some lees complexity from barrel storage prior to bottling.
Pale straw, Foxeys Hangout Pinot Gris has a focused acid line with a touch of residual sugar adding texture rather than sweetness. Cellaring potential is two years.
