Clover Hill Cuvée Prestige Blanc de Blancs is a blend of several cuvées handpicked from the Clover Hill vineyard in north-eastern Tasmania.
Chardonnay fruit is selected from specific sections based on variation in row orientation, altitude, soil depth and mesoclimate, so different blends can be produced each season.
Clover Hill practice méthode traditionnelle French winemaking. The fruit is gently whole bunch pressed and fermented before being transferred to tank where it undergoes partial malolactic fermentation and bâtonnage (stirring on lees).
The base wine is then bottled with yeast and a small amount of sugar. This second fermentation results in a natural sparkling wine.
The wine ages on lees in bottle for over 10 years prior to disgorging. During maturation the bottle is rotated and turned upside down so that the lees eventually settle in the neck where they are frozen and removed.
In the final stage the bottle is filled to replace the missing volume. The unique Clover Hill style is achieved by inserting selections from reserve wines aged in French oak foudres.
Vibrant straw, Clover Hill Cuvée Prestige Blanc de Blancs has a persistent fine bead, an array of citrus and stone fruit flavours and a backbone of natural acidity.
It is made in limited quantities, and then only in exceptional vintages. Cellaring potential is four years.
