UMAMU Cane Cut Sauvignon Blanc is made only in years when the conditions are right in the vineyard. The Sauvignon Blanc vines were planted in 1987.
The fruit is hand harvested with high levels of sugar, then cold crushed to press. After cold settling, the juice ferments at 12°C in barrel. The wine is aged on light lees for four months before bottling.
Deep gold, UMAMU Cane Cut Sauvignon Blanc is a sweet wine with rich fruit flavours kept in check by acidity. Cellaring potential is three years.
