The Specialist Cabernet Sauvignon

Thompson Estate The Specialist Cabernet Sauvignon is sourced from the estate vineyard at Wilyabrup in Margaret River. Made in limited quantities, it is the winery's best-of-vintage Cabernet.

The grapes are tenderly harvested from select rows of vines, then processed into fermenters. As it ferments, the juice is gently pumped over three times daily to maximize colour extraction.

Once fermentation is complete, the wine is left on skins for seven days to develop complexity. It then matures in a selection of fine French oak barrels for 18 months.

The best barrels are chosen for the final blend. Small additions of varieties such as Malbec, Merlot and Shiraz round out the wine.

Deep crimson red, Thompson Estate The Specialist Cabernet Sauvignon has long juicy fruit flavours, a fleshy but firm tannin structure, and savoury spice. Cellaring potential is 20 years.
