Taylors The Legacy Cabernet Sauvignon is the culmination of a fifty year winemaking journey for Taylors. It is produced in extremely limited quantities.
Most of the Cabernet draws from outstanding blocks on the Taylors family estate in the Clare Valley, with smaller parcels from long term grower partners in Coonawarra. Small additions of Merlot and Cabernet Franc complete the blend.
The Cabernet Sauvignon is destemmed, chilled and sent to stainless steel fermenters for cold soaking. Most is then transferred to a selection of fine grained, high quality French oak for barrel fermentation.
Every barrel is gently mixed by gas twice a day. Malolactic fermentation also takes place in barrel. The barrels are carefully sealed with food grade silicon for an extended period of skin contact to soften the tannins and add texture.
The wine matures in Jean Louis Vicard barrels – a selection by the Cooperage of their finest 36 month old, fine grained and lightly toasted oak. The wine develops for 36 months maturation in a cool, temperature controlled cellar.
Dark garnet red, Taylors The Legacy Cabernet Sauvignon has luscious dark fruit flavours seamlessly integrated with savoury oak complexity and textural richness.
An exceptional Clare Valley Cabernet. Cellaring potential is 20 years.
