The Enclave Close Planted Pinot Noir
Wine
Sinapius The Enclave Close Planted Pinot Noir is sourced from a single high density block of estate Pinot Noir. With 7,700-10,250 vines per hectare, it is the most densely planted vineyard in Pipers River.
The close spacing produces fruit concentrated in flavour but miniscule in yield: it takes two vines to create just one bottle of wine!
The fruit is handpicked and hand sorted both in the vineyard and the winery. It is typically wild yeast fermented as destemmed whole berries, with a whole bunch component in some years.
The wine then transfers to new and seasoned French oak barrels for 15-18 months of maturation. It is bottled unfined and unfiltered.
Deep vermillion, Sinapius Vineyard The Enclave Close Planted Pinot Noir has intense red fruit flavours interwoven with spice and mouth coating silky tannins. Cellaring potential is 10 years.
