Saltram The Journal Old Vine Shiraz is a tribute to the winery's rich Barossa history. It draws from the very low yielding Schultz Vineyard planted in 1901: centenarian vines classified under the Barossa Old Vine Charter.
From the day he planted his first Barossa vines in 1859, Saltram founder William Salter meticulously recorded all his winemaking activities in a journal. Its pages contain techniques still used by the winery today.
Most of the wine matures in a seasoned French oak vat, allowing the tannins to soften and the characters of the vineyard to take centre stage. The balance matures in new French oak barrels.
After blending and bottling, the wine spends a further 12 months ageing prior to release.
Deep dark red, Saltram The Journal Old Vine Shiraz is medium bodied with lingering brambly fruit flavours and unwavering fine grainy tannins. Cellaring potential is 20 years.
