The Kay Reserve Chardonnay
Wine
Pike & Joyce The Kay Reserve Chardonnay is the winery's leading Chardonnay, named after Joyce family matriarch Kay Joyce. The fruit is estate grown at Lenswood in the Adelaide Hills.
The grapes are handpicked and chilled overnight to minimize oxidization during processing. A mix of whole bunch and destemmed fruit is pressed for fermentation in French oak barrels. Wild yeasts are used.
A very small portion of the barrels undergo malolactic fermentation. After around eight months of maturation, the best barrels are selected to comprise the final blend.
Pale green, Pike & Joyce The Kay Reserve Chardonnay has white stone fruit and creamy, nutty oak flavours, with a finish of lingering acidity. Cellaring potential is 10 years.
