Pepper Tree Block 21A Wrattonbully Cabernet Sauvignon is sourced from the winery's South Australian vineyard at Wrattonbully, adjacent to the Coonawarra at the southern end of the Limestone Coast.
Block 21A produces some of Pepper Tree's best Cabernet. The block's famous terra rossa soil has a thin layer of sandy loam over soft limestone. It produces small bunches of tiny, concentrated fruit.
The fruit is handpicked at flavour ripeness from individual rows in four separate passes. Destemmed, it is crushed into static fermenters where it ferments with selected yeast strains.
Fruit from each pass is individually fermented. After ferment the wine is pressed off skins to French oak to mature for 18 months. The best barrels are selected for the final blend.
Deep purple crimson, Pepper Tree Block 21A Wrattonbully Cabernet Sauvignon is rich with dark berry flavours, spicy oak and lithe, chalky tannins. Cellaring potential is 12 years.
