Quandong Farm Shiraz

Paxton Quandong Farm Shiraz is grown on the Quandong Farm Vineyard at Seaview, McLaren Vale, the first of Paxton's vineyards to be converted to biodynamic practices.
David Paxton was fully aware of the premium placed on land used for vineyards when he purchased the block in 1997. He told the real estate agent that he intended to plant Quandong trees – which today just happen to look like Shiraz vines.
The 'Quandong fruit' is picked at optimum flavour and sugar equilibrium. A portion is left as whole bunches while the remainder is delicately destemmed. Each small batch ferment is carefully plunged and pumped over to extract colour, flavour and tannin.
The wine is then pressed to new and seasoned French oak barrels where it matures for 12 months prior to blending and bottling.
Vibrant crimson purple, Paxton Quandong Farm Shiraz balances concentration and delicacy. Silky tannins deliver a smooth, velvety finish. Cellaring potential is 10 years.
