Jones Block Shiraz
Wine
Paxton Jones Block Shiraz is made with a small parcel of fruit selected from century old vines on the Jones Block at Seaview, McLaren Vale.
The vines are carefully hand pruned and crop thinned to ensure a low and uniform yield of Shiraz fruit. The grapes are handpicked at optimum sugar and flavour equilibrium.
The fermenting juice is pumped over and plunged twice a day to extract colour, flavour and tannin structure. It is kept on skins for two weeks before being pressed and sent to a mix of French and American oak barrels, both new and seasoned.
After up to 22 months of maturation, the wine is blended, bottled and cellared for at least six months prior to release.
Deep crimson, Paxton Jones Block Shiraz is full bodied with concentrated fruit flavours and generous oak. Cellaring potential is 20 years.
