Melba Reserve Cabernet Sauvignon

De Bortoli Yarra Valley Melba Reserve Cabernet Sauvignon draws from estate vineyards across the Yarra Valley. It honours renowned opera singer, and Yarra Valley resident, Dame Nellie Melba.

The fruit is handpicked, destemmed, crushed and fermented in open top and static fermenters. It undergoes natural temperature controlled fermentation and is left on skins for up to 18 days.

The wine is then pressed, settled overnight and gravity filled to new and seasoned French oak casks, where it matures for 15 months.

Deep garnet, De Bortoli Yarra Valley Melba Reserve Cabernet Sauvignon has sweet dark fruit flavours, grainy texture and savoury tannins. Cellaring potential is 10 years.
