Wine
Mitolo Angela Shiraz is a tribute to the Mitolo family matriarch. It is sourced from the Lopresti family vineyard near the seaside town of Willunga in southern McLaren Vale.
The fruit is destemmed and gently crushed. The ferment is kept cool to ensure the tannins, flavours and colour are softly extracted and the characters of the fruit are retained. It receives pump overs once daily.
The wine is transferred to fine grained oak barrel, new and 1-2 years old. Here it undergoes natural malolactic fermentation and 18 months of ageing before blending.
Deep ruby, Mitolo Angela Shiraz is medium bodied with fresh black fruit flavours. Fine, ripe tannins draw the wine to an earthy finish. Cellaring potential is eight years.
