Estate Vineyard Sauvignon Blanc

Medhurst Estate Vineyard Sauvignon Blanc draws from the winery's vineyard at Gruyere in the Yarra Valley, chosen for its north facing slopes and well drained soils.
The fruit is whole bunch pressed and the cloudy juice is filled to French oak barrels with full solids. Wild yeast fermentation occurs over 20-40 days without cooling to show a more mineral, earthy side of Sauvignon Blanc.
The wine spends five months in oak before it is blended in tank, where it spends a further month on lees to build texture.
Pale straw green, Medhurst Estate Vineyard Sauvignon Blanc is complex and textural in style with toasty, flinty hints from barrel fermentation. Cellaring potential is five years.
