Crittenden Estate Cri de Coeur Sous Voile Savagnin is made with the finest parcels of Savagnin grown on the estate's Mornington Peninsula vineyard. It is only produced in select vintages.
It is Crittenden Estate's 'fortunate mistake'. Originally they intended to plant the Spanish variety AlbariƱo, but were given Savagnin instead. They decided to keep the vines, and now they produce a leading Australian example of the variety.
The fruit is whole bunched pressed to seasoned French oak barrels. Following natural primary and malolactic fermentation, the barrels are placed in a well ventilated shed to mature for three years.
Sous voile, or 'under a veil', refers to the film of yeast that forms over the surface of the wine as it ages. It allows partial, but not excessive, oxidation to develop the wine's characteristic complexity.
Bright straw, Crittenden Estate Cri de Coeur Sous Voile Savagnin has an array of preserved citrus flavours, spice notes and chalky texture. Cellaring potential is 20 years.
