Elevation Eden Valley Shiraz
Wine
Eperosa Elevation Eden Valley Shiraz is sourced from the Boongarrie Estate Vineyard in the Eden Valley, grown at 440 metres elevation in light sandy loam over gravel and sandstone soils.
The grapes are hand sorted into small open fermenters and gently crushed by foot. The ferments receive daily hand plunging and/or rack and returns during fermentation.
After resting on skins for up to 24 days, the wine is basket pressed to new and seasoned French oak barrels. Maturation on lees follows, with malolactic fermentation allowed to run its natural course.
Prior to bottling, the wine is carefully hand racked. It is neither fined nor filtered.
Deep purple, Eperosa Elevation Eden Valley Shiraz is a full bodied wine with lashings of cool blue and black fruit flavours and savoury characters. Cellaring potential is 20 years.
