Violet Hour McLaren Vale Shiraz
Wine
Bondar Violet Hour McLaren Vale Shiraz is made with fruit from the estate Rayner Vineyard, set amongst two hills on the border of Blewitt Springs and Seaview in McLaren Vale.
It is the inaugural Bondar wine. Its name was inspired by the sunset that lit the sky as co-founders Andre Bondar and Selina Kelly handpicked their first Shiraz grapes.
The wine is a blend of young and old vine fruit, with some plantings dating back to the 1950s. All the grapes are hand harvested and fermented naturally with some whole bunch inclusion. Extended time on skins gently extracts flavours.
The wine then matures in mostly seasoned French oak barrels. It is then blended to tank, developing for several months before it is bottled unfined and unfiltered.
Deep violet, Bondar Violet Hour McLaren Vale Shiraz is medium bodied with layered fruit flavours, savoury complexity and silky texture. Cellaring potential is five years.
