Castelli Estate Empirica Fumé Blanc is sourced from the best available Sauvignon Blanc fruit across the Great Southern in Western Australia.

The wine is made in Castelli Estate's winery on Mount Shadforth in Denmark.

The grapes are harvested in the cool of the night, crushed and chilled. Extended skins contact extracts the intense flavours encased in the skins.

The free run juice is sent directly to new and one year old French oak barrels for wild fermentation.

Pale straw, Castelli Estate Empirica Fumé Blanc is rich with pure fruit flavours and earthy oak complexity. Cellaring potential is three years.
