Byron & Harold The Partners Cabernet Sauvignon represents the winery’s top tier Cabernet. It is sourced from dedicated growers in Western Australia's Great Southern region.
The fruit is destemmed, crushed into static fermenters and cold soaked for around a week. After warming naturally, the juice is inoculated with yeast.
Once fermentation begins the tanks are pumped over with aeration twice daily. The temperature is held at 24-26°C to promote a slow extraction of tannins and increase the complexity of the flavours.
The wine is then pressed and transferred to French oak barrels for malolactic fermentation and 18 months of ageing. It is fined with egg whites prior to bottling.
Deep crimson, Byron & Harold The Partners Cabernet Sauvignon has generous dark fruits, delicate savoury spice and fine, chalky tannins. Cellaring potential is eight years.
