Wine
Bellvale Pinot Noir is drawn from a single vineyard in South Gippsland, Victoria. In the tradition of Burgundy in France, the vines are densely planted and yields are limited, trading quantity for quality.
The fruit is crushed, cold soaked and a small portion of the stalks are added back. During fermentation the juice is hand plunged. After a short post-ferment maceration, the wine is aged in new and seasoned French oak barrels for at least 12 months.
Bright red purple, Bellvale Pinot Noir's dense fruit core is framed by balanced oak, polished tannins and persistent spice. Cellaring potential is seven years.
