Flaxman Wines Shhh Cabernet is handpicked from a single dry grown, low yielding vineyard in the Eden Valley. It is produced only in tiny amounts, in the best vintages.

Originally, winemaker Colin Sheppard was discouraged from making a Cabernet by his wife Fiona. He quietly went ahead and made one anyway, labelling the maturing barrel simply with 'Shhh'.

The fruit is open fermented with hand plunging. Maturation takes place in French oak barrels for 24 months, then the wine is bottled without fining or filtration.

Deep purple, Flaxman Wines Shhh Cabernet has rich dark fruit flavours, structured tannins and subtle oak. Cellaring potential is 12 years.
