Evans & Tate The Evans & Tate Cabernet Sauvignon is made only in stellar vintages. It represents the pinnacle of Evans & Tate's winemaking, celebrating the unique essence of the Margaret River region.
Margaret River – Wilyabrup in particular – is renowned for quality Cabernet. Evans & Tate's estate vineyard is home to some of the oldest vines in the region.
The fruit is gently destemmed, and the whole berries are loaded into a small static fermenter. After several days of cold soaking, the juice warms for wild yeast fermentation. Post ferment the wine rests on skins for two weeks to gain structure.
Malolactic fermentation and 18 months of ageing occurs in fine grained French oak barrels. The wine is bottled with light fining, then is aged further in the bottle.
Deep red, Evans & Tate The Evans & Tate Cabernet Sauvignon has dark fruit flavours with an elegant layer of toasted savoury spices and beautiful tannin structure. Cellaring potential is 10 years.
