Clémentine Cabernet Blend

Woodlands Clémentine Cabernet Blend is sourced from the winery's Woodlands Brook Vineyard, where Andrew Watson and wife Marie fell in love. The wine is named after their daughter Clémentine.
The wine is typically 55% Cabernet Sauvignon with smaller amounts of Malbec, Merlot, Petit Verdot and Cabernet Franc. The fruit is gently destemmed by a gravity fed system, then hand sorted and crushed.
Fermentation occurs in small stainless steel fermenters. The Cabernet portion sees extended maceration on skins to add complexity and ensure tannin integration.
The wine matures in one third new French oak barrels for around 18 months before blending and bottling.
Bright crimson, Woodlands Clémentine Cabernet Blend has red and dark berry flavours with supple tannins and a lingering backbone of acidity. Cellaring potential is 10 years.
