Wine
Mayford Shiraz is sourced from a single vineyard at the cooler southern end of the Alpine Valley in Victoria.
The wine is a blend of Mayford's 14 different Shiraz clones, each providing individual characters. The newer clones lend perfume while the original Shiraz vines, planted in the 1990s, bring depth and power.
The fruit is selectively handpicked over several weeks, with each small parcel kept separate by clone and harvest date. The batches are chilled and cold soaked prior to indigenous yeasts fermentation.
The number of small ferments means that there is ample room for trial and comparison. Each batch has varying time on skins, percentage of whole berry and whole bunch inclusion, and degrees of post-ferment maceration.
Maturation takes place in new and seasoned French oak barrels for 22 months before the wine is prepared for bottling.
Crimson purple, Mayford Shiraz is a fragrant cool climate Shiraz, medium bodied with glossy dark fruits, a lick of spicy oak and fine tannins. Cellaring potential is 10 years.
