Ovens Crossing
Wine
Mayford Ovens Crossing, a blend of Tempranillo and Cabernet Sauvignon, is made in limited volumes from exceptional vintages.
It is sourced from an unirrigated vineyard near Porepunkah in foothills of the Victorian Alps. Ovens Crossing is the former name for the Porepunkah township.
The Tempranillo and Cabernet grapes are handpicked, chilled and cold soaked. They begin natural yeast fermentation in small open fermenters with regular hand plunging. Just prior to dryness, the parcels are basket pressed.
The juice finishes fermentation and undergoes malolactic fermentation in new and seasoned French oak barrels. Following 11 months of maturation, the wine is blended and returned to seasoned oak, where it matures for 11 months further.
Deep dark red, Mayford Ovens Crossing is dark, brooding wine with a core of ripe fruit flavours and sinewy but firm tannins. Cellaring potential is 10 years.
