Wine
By Farr Chardonnay grows in the winery's oldest vineyard in red minerally soil over limestone. The vines are sited on an exposed, north facing slope in the Moorabool Valley.
The handpicked fruit is whole bunch pressed to French oak barrels. All the solids are collected and chilled, then put to barrel. Temperature controlled natural fermentation takes place.
The ferment is stirred to trigger malolactic fermentation. After 12 months ageing in barrel, the wine is racked, fined and lightly filtered prior to bottling.
Straw green, By Farr Chardonnay has rich fruit flavours, restrained power and the minerality characteristic of its vineyard. Cellaring potential is seven years.
