Late Harvest Pinot Gris

Quealy Late Harvest Pinot Gris is grown on a carefully selected portion of the estate grown Tussie Mussie Vineyard at Merricks North on the Mornington Peninsula.
In the style of the wines of Alsace in France, the grapes are left on the vine to develop Botrytis cinerea, or Noble Rot. The mould causes the grapes to shrivel, concentrating the sugars in the fruit.
The fruit most affected by Botrytis is hand selected following very specific growing conditions. Cool, humid weather must be followed by overcast days with gentle sunshine to help the grapes raisin. Too much rain or sun lessens the effect.
The fruit yields treacle like juice. Where possible, wild yeasts are used for fermentation. Typically the juice is so sweet that the ferment naturally stops early, though if required the process is halted via cooling.
Bright golden straw, Quealy Late Harvest Pinot Gris is a sweet dessert wine with layers of honeyed stone fruit and spice. Cellaring potential is 10 years.
