Gemtree Wines Subterra Shiraz is a rare and unique expression of Shiraz – a wine truly made in the vineyard.
It begins with a careful and considered selection of fruit from the winery's biodynamic vineyard in McLaren Vale. The grapes are handpicked and destemmed on a fruit day of the biodynamic calendar.
The fruit is transferred to an open fermenter as whole berries. Once the tannins are in perfect balance, the skins are hand dug from the fermenter to the press. Only the free run juice is retained to complete primary and malolactic fermentation in French oak.
The finest single barrel is isolated and coated in a thin layer of beeswax, then returned to the vineyard in which its contents were grown. Placed in a hole two metres deep, it is covered in earth and left to rest.
After 6-8 months, the wine is unearthed. It is racked off its lees and decanted straight to bottle, where it is hand corked and sealed with beeswax. It spends a further 11 months ageing in bottle before release.
Deep purple, Gemtree Wines Subterra Shiraz is a full bodied wine, seamless and fruit driven with balanced acidity, spice and long tannins.
Made in extremely limited quantities. Cellaring potential is 12 years.
