Ballycapple Cabernet Sauvignon

Erin Eyes Ballycapple Cabernet Sauvignon, named after a tiny townland in County Tipperary in Ireland, is made with carefully selected Clare Valley fruit.
The consistency of the Clare climate is well suited to producing Cabernet. The fruit is lightly crushed for fermentation. Maturation takes place in French oak barrels for 20 months. The wine is made only in small batches.
Deep purple, Erin Eyes Ballycapple Cabernet Sauvignon has intense cassis flavours and a fine but firm tannin structure. Cellaring potential is 10 years.
