Devil’s Corner Resolution Pinot Noir is sourced from Hazards Vineyard on Tasmania's east coast. The maritime location moderates the climate and provides frost protection, while the mountains attract rain.
These influences ensure excellent growing conditions and produce the high quality Pinot Noir for which eastern Tasmania is known.
The fruit is cold soaked and plunged twice daily until fermentation starts, helping create lengthy tannins. It is then open fermented with wild yeasts and partial whole bunch inclusion.
The wine is hand plunging up to six times a day. Once basket pressed, it is settled for 48 hours, then transferred to one quarter new French oak barrels to mature.
Crimson in colour, Devil’s Corner Resolution Pinot Noir is full bodied and fruit driven with a crisp savoury texture and fine grained tannins. Cellaring potential is eight years.
