Dappled Appellation Pinot Noir is predominately comprised of MV6 clone fruit sourced from a blend of cool vineyards in the Upper Yarra Valley.
The fruit is handpicked and cold soaked. Wild yeast fermentation occurs in open fermenters with around one third of the grapes retained as whole bunches. The ferments are plunged by foot.
Malolactic fermentation takes place naturally. The wine is aged for 10 months on full lees in French oak barrels, a small proportion new, with sulphur the only addition. The wine is bottled by gravity, unfined and unfiltered.
Deep red, Dappled Appellation Pinot Noir is round and dark with smoky, savoury tannins and a soft silky finish. Cellaring potential is seven years.
