Appellation Chardonnay

Dappled Appellation Chardonnay is a blend of Chardonnay sourced from Upper and Lower Yarra Valley vineyards. Clones include P58, I10V1, and Dijon clones 76 and 95.
Handpicked fruit is cooled overnight. Whole bunches are lightly crushed by foot before a long pressing straight to new and seasoned French oak. The juice is wild yeast fermented without temperature control.
Maturation takes place for around 10 months on lees with no bâtonnage, or stirring. Some malolactic fermentation may occur but is not encouraged. The wine is sulphured, lightly filtered and bottled unfined.
Pale straw, Dappled Appellation Chardonnay is textured and lush, with white stone fruits, buttery oak and a fresh citrus acid line. Cellaring potential is five years.
